Lentil soup — aside from being a staple in our household — is a hearty and nutritious meal. Lentils are high in protein, fiber, and iron, making the soup a healthy and filling meal. This stove top meal can quickly be thrown together on a busy day and makes for a delicious dinner!
Cooking instructions
Note: You can use green or black lentils, but will need to cook a little longer.
- Heat most of the olive oil in a large soup pot set to a medium temperature
- Sauteé onions until they begin to soften (about 5 minutes)
- Add garlic and stir mixture often until everything is very soft, but not yet browned
- Add celery and carrots and cook for another 10 minutes
- Add water, tomato paste, tamari and pepper
- Stir thoroughly, making sure the tomato paste is thoroughly mixed in
- Bring soup to a boil, then lower to a simmer
- Cook for about one hour, stirring occasionally, loosely covered with a lid so that steam can escape
- Add a little more water if needed
- Test the carrots and celery to make sure they are soft. Once they are, remove the lid for a few minutes. This allows the soup to thicken
- Add more tamari or salt to taste
- Stir in remainder of olive oil right before serving
