The holidays are here, and if you’re anything like us, that means craving a bowl of creamy, comforting mac and cheese. While this isn’t one of our health-focused recipes, it’s the perfect indulgence to satisfy all your holiday cravings. Treat yourself — you’ve earned it!
- Start with 4 tablespoons of vegan butter or olive oil in a medium sized pot
- Once melted, stir in two tablespoons of flour
- Cook flour for 3 minutes
- Add 2 cups of vegetable broth
- Bring to a boil, then lower temperature
- Add salt, pepper, onion powder, and 3 cups of a vegan cheese of your choice (for this recipe, we chose a nut-free variety of vegan cheese)
- Stir until melted
- Add in a tablespoon of nutritional yeast
- Continue stirring frequently until cheese melts
- While it’s melting, separately boil one box of pasta
- Separately, toast 1 cup of breadcrumbs. Top with olive oil, salt, pepper, and garlic powder
- Toast until golden brown
- Once cheese is melted, combine pasta with cheese sauce and top with toasted breadcrumbs
