Ingredients:
  • 4 tablespoon vegan butter
  • 2 tablespoon flour
  • 2 cup vegetable broth
  • 3 cup vegan cheese
  • 1 tablespoon nutritional yeast
  • 16 ounces pasta
  • 1 cup breadcrumbs
  • 1 tablespoon olive oil
  • 1 pinch salt
  • 1 pinch pepper
  • 1 teaspoon garlic powder
  • The holidays are here, and if you’re anything like us, that means craving a bowl of creamy, comforting mac and cheese. While this isn’t one of our health-focused recipes, it’s the perfect indulgence to satisfy all your holiday cravings. Treat yourself — you’ve earned it!

    1. Start with 4 tablespoons of vegan butter or olive oil in a medium sized pot
    2. Once melted, stir in two tablespoons of flour
    3. Cook flour for 3 minutes
    4. Add 2 cups of vegetable broth
    5. Bring to a boil, then lower temperature
    6. Add salt, pepper, onion powder, and 3 cups of a vegan cheese of your choice (for this recipe, we chose a nut-free variety of vegan cheese)
    7. Stir until melted
    8. Add in a tablespoon of nutritional yeast
    9. Continue stirring frequently until cheese melts
    10. While it’s melting, separately boil one box of pasta
    11. Separately, toast 1 cup of breadcrumbs. Top with olive oil, salt, pepper, and garlic powder
    12. Toast until golden brown
    13. Once cheese is melted, combine pasta with cheese sauce and top with toasted breadcrumbs
